Duxbury 2014

Thanks to the Duxbury Guilfoiles for hosting yet another family reunion (less Tommy, but a hermit crab was named in his honor, so it was practically like he was there). Here’s a picture of hermit crab Tommy fighting with hermit crab Joe – so yeah, just like he was there.

Here are the key recipes from the week that I promised.

Caprese Salad with Watermelon

Mix sliced grape tomatoes, sliced fresh mozzarella, sliced basil and sliced watermelon (or do it all somewhat cubed) on a platter.  Drizzle with balsamic glaze, olive oil and sprinkle with sea salt.

Lemon Risotto

I don’t mix in the butter at the end – health food!   For the Duxbury crowd of 18, I doubled the recipe.  Important to use low-sodium chicken broth otherwise it ends up too salty.

Rainbow Salad

I usually buy jarred mango, because I’m not good at playing the “buy a mango, is it ripe, not yet, not yet, not yet, now overripe” game.  Unless you can find already shelled and skinned hazelnuts, use slivered almonds, because life is too short to be de-skinning hazelnuts.  And when worded like that, the process sounds a little gross.

Buttered Noodles

Boil the 12th box of pasta in 4 days.  Drain. Add butter.  Go to the store and buy more pasta and butter.
